Snack food in Hanoi: less is more

With the fast approach of winter in town, most Hanoi lovers are seeking new places for snack food and their most iconic wintry dishes are nem chua ran (fried fermented pork), banh mi thit xien (grilled pork with toast), or banh chuoi (fried banana cake).

The best food shops in Hanoi are tucked away in very small places, or on really narrow stretches of pavement. It is a common thing to see formally dressed gentlemen sitting in low chairs for their breakfast bowl of pho—an interesting Hanoi eating style. But we are not talking about pho or bun cha, since these great dishes have been introduced to the world many times over. This beautiful city has a lot more to offer those who want to eat like a local.

Pieces of Nem chua are peeled from their banana leaf wrappings, skewered on bamboo, and grilled over charcoal. Customers sit on plastic chairs while eating and watch the bustle of the streets. The spicy, sour, sweet, and peppery flesh tastes especially apt in winter’s freezing air. This dish is especially popular among teenagers, who are lucky enough to remain undaunted by its somewhat oily nature. Two very popular addresses for nem chua ran are along the very narrow Tạm Thuong (Hang Bong street) and the areas around Nha Chung.

The second dish on my list of favourites is thit xien nuong. The hot meal is typically authentic Vietnamese fast food, easily found in Quang Trung or Ta Quang Buu Street. If you have a chance to visit the Quang Trung location in the afternoon, you should not be surprised by the crowds enjoying their snack food. Fresh and lean pork is grilled until it becomes soft and aromatic. It is a perfect match with toast and pickles.

Unlike the savoury nem chua ran and thit xien nuong, the banh chuoi delivers crispy banana-scented sweetness. The banh chuoi is a popular Vietnamese dessert recipe. Its main ingredients include banana, oil (or fat), and flour (usually wheat flour), as well as salt, sugar, eggs, honey, or butter. It is easily found in the Old Quarter or even made at home.

These three dishes celebrate the purity of simplicity in the quintessential style of Northern Vietnam. They’re a delicious fast track to much-needed winter warmth, and once you sample even a little, you will always return for more. So goes the saying “less is more”.

Knocking on Quan Ba skydoor


Ha Giang Province is famous for Dong Van Geopark which is recognized as a Karst Plateau Global Geopark by UNESCO.

The gateway to the geopark is called Quan Ba by local people meaning skydoor due to its height and the fact that fog always covers the top, which makes people think it is the door to the sky.

Not only that but it has a magnificent panoramic view of Tam Son City appearing in the green valley below.

It is also the perfect spot to appreciate the beautiful Fairy Twin Mountains which lie in among the rice fields.

Its reverse bowl shape has made the Twin Mountains special from other mountains. The mountains resemble a woman’s breasts - that’s why in local language they call them fairy twins.

It takes around half an hour from Tam Son City to Quan Ba skydoor. The road is poor and is full of large trucks which slow your speed considerably as you have to be very careful to avoid accidents. Tourists can stay at Tam Son City which has nice hotels and restaurants.

In addition to Quan Ba skydoor and Fairy Twin Mountains, tourists may find it interesting to go to Quan Ba market day or the Hop Tien Weaving village of H’Mong minority people.

Different colours of Vietnamese Tea

The way of making and drinking Lotus or Jasmine tea is the treasured custom of Vietnamese people. Every cup of natural flower-scented tea captures a fraction of Vietnam’s rich and vibrant culture.

The Vietnamese habit of taking tea, betel, or a cigarette as a prelude to conversation is even referenced in the folk saying "a quid of betel and areca-nut starts the ball rolling".

Drinking tea, once restricted to the noble classes of society, is now enjoyed by people from all walks of life.

This practice shows to the liberal character of the people’s soul and mannerism. They manifest a belief in the importance of pleasure. Drinking tea is a preliminary ritual for a wide range of important occasions, including conducting business, scholarly meditation, getting acquainted, serving guests at home or at parties, romance, and sometimes just to satisfy one’s thirst.

Tea, known as “trà” in Vietnamese, can be divided into three kinds—dried tea leaves, tea combined with herbal remedies, and tea scented with flowers—each possessed to best advantage. For green tea people prefer brewing it hot and strong and sometimes flavoured with lotus, jasmine, or chrysanthemum flowers. The therapeutic and medicinal functions of tea are well known for its incongruously cooling effect in both hot and cold weather conditions.

The unique and exquisite lotus tea is one variety especially popular during Tet –Vietnam’s traditional Lunar New Year festival. The people of Tràng An (ancient Hanoi people) were renowned their lotus tea making and drinking. The lotus is seen as a pure and serene flower that gathers the essence of heaven and earth in its scent.

Drinking lotus tea is an elegant feature of Hanoi lifestyle. Locals say they have to pick lotus flowers when they are just in bloom and keep the petals and pistils fresh without a single rip of tear-for a painstaking process of mixing them with green tea leaves many times. It is believed that the best lotus flowers are collected from the ponds of Quảng Bá village near West Lake in Hanoi or from Tịnh Tâm Lake in Huế City because the blossoms grow larger and more fragrant.

Jasmine tea, also made from green tea leaves but scented with jasmine flowers, requires special preparations. The jasmine flowers are harvested during the day and stored in a cool place until nightfall to preserve their full fragrance. They are then layered over green tea leaves and every step of the scenting process is done by hand.

The Vietnamese regard drinking tea as a gesture of hospitality that binds people together. They often invite their friends or neighbours to come over for a chat over a small cup of tea that is commonly sipped to savour its delicious aftertaste.

Nowadays, young Vietnamese generations are inclined to seek the comfort of nostalgia by learning the intricacies of their cultural tradition.

AM: Our guide will pick up at your hotel. Then we have a two hour drive through the picturesque countryside and back roads to the village of Duc , where we get on a small boat for a one hour trip up Yen Vy stream to Thien Tru Quay . You may trek up (or take cable car) to the mountain to Perfume Pagoda.
PM: Lunch box will be ready after that. Going down and then get to Thien Tru Quay to visit more beautiful and precious sculptures, taking photos, worshipping, getting on boat again back to Duc wharf.
Driving back to Hanoi around 5:00 PM. Overnight in Hanoi.

Day 3: Hanoi City Tour - Sapa (B, L)

AM: Getting started from your hotel for Hanoi tour, driving to visit Ho Chi Minh complex, including Ho Chi Minh’s Mausoleum – the final resting place of the Vietnamese great father or uncle Ho, President Ho Chi Minh’s stilt House – where he lived on and off from 1958 to 1969, the next place to move to is One Pillar Pagoda – a group of structures consisting of a pagoda and a tower built in the middle of a square lake. Leave One Pillar Pagoda and transfer to West Lake, visit Tran Quoc pagoda then having lunch.
PM: After lunch, you will be transferred to visit the Temple of literature. Continue to visit Museum of Ethnology – the most interesting museum in Hanoi with many different things relating the 54 Vietnamese ethnic groups. After that, you will visit Hoan Kiem lake (Restore Sword Lake). The last place of the tour is taking a walk for few minutes to visit The old quarter of Hanoi, finally enjoy Vietnam traditional water puppet show within one hour, having dinner then night train to Sapa. Overnight in soft sleep train.

Day 4: Sapa Home-stay Tour (B, L, D)

AM: The train arrives in Lao Cai around 6.00 AM, We drive up to Sapa about 50 minutes on Car / Van, you will be taken to a small guesthouse for a morning showers then your breakfast at a local restaurant here. After breakfast & short morning beak, we start trekking from Sapa town. Our trekking route is from here to through the villages of Hmong and Zay people, chances to meet the locals working on the mountainsides or the rice terraces, kids ride on back of buffalo, to take photograph ofpicturesque valleys & awesome scenery. We have picnic lunch on trekking route.
After lunch keep on trekking to Ta Van village of Zay people, where you will be warmly welcomed by the host, share the dinner with them, and stay at their traditional wooden house. Have dinner and homestay in Tavan village at Dzay family.

Day 5: Sapa Tour - Ta Van Village (B, L)

AM: After breakfast; we are on the beaten track to Giang Ta Chai village of the Red Dzao minority via the paths between terraces and through bamboo forests. Visit silver waterfall and suspension Rattan Bridge, visit the people in the village and then cross Muong Hoa River up to the mountain to visit the last village of the trek - Supan village of the H\'mong then having picnic lunch.
PM: Get back to Sapa by Car / Van. On the way back, enjoy visiting the ancient stone circle where stones are decorated with ancient carvings. Check in hotel. and your free time to exploreSapa town. Overnight in Sapa.

Day 6: Sapa - Cat Cat Village - Hanoi (B, L, D)

AM: Breakfast, visit village of the black H\'mong (Cat Cat village), walk around visiting people in the village and the hydroelectric power station built by the French in the old days.Back town have lunch
PM: Check out hotel, free to explore the town. At about 5 PM. drive to Lao Cai station for a night train back to Hanoi. Overnight in soft sleep train.

Day 7: Hanoi - Halong Bay Cruise (B, L, D)

AM: After breakfast at hotel, our van will pick you up and we start our 4-hours drive to Halong City stopping on the way for some refreshments and local hospitality. Upon arrival at Halong City, we transfer to our boat for a cruise in the stunning Halong Bay. Sea food lunch will be served on board.
PM: After lunch we will have opportunity to visit one of the most beautiful caves of Halong, Surprise Cave. From here we take our boats to the Ti Top Beach, where we can have a swim or climb up to the top of the island for outstanding panoramic view of the Bay. Stay overnight on cruise.

Day 8: Halong Bay Tour - Hanoi- Hue (B, L)

Enjoying sunrise breakfast and cruising around the clear & emerald water to another part of Halong bay with a close up view of stunning limestone peaks …Stopping at Gia Luan Dock for picking up-dropping off passengers and keeping on another side toward Halong harbor. Feel ready to have lunch on board and enjoy the rest of the boat trip. Arriving at Halong dock have short break before en route to Hanoi. Arrival back at your hotel around 4:30 PM.
Some free time for dinner until transfer time to the airport for your flight to Hue. Upon arrival, driver will pick you up and transfer to Hue City Center. Overnight in Hue.

Day 9: Hue City Tour - Boat Trip (B, L)

AM: Pick you up at 8.00am from the hotel in Hue central, then transfer to the pier for a motor dragon boat ride along Perfume river, the first impression is a green and peaceful on both side of the river. First stop at Thien Mu pagoda, the magnificent architecture was found in 17th century. Transfer back to Hue city centre to visit the Imperial Citadel, Flag Tower, Noon Gate, Nine Dynasty Urns, Nine Holy Cannons, Thai Hoa Palace. Enjoy lunch at Vietnamese restaurant for special dishes in Hue Vietnam.

Day 10: Hue - Hoi An Tour by Bicycle (B)

AM: Our driver take you to Hoi An Old Town, we will cross Hai Van Pass where you will have magnificent view of the China Sea. Stop at Lang Co to have break. Check in hotel and have lunch by you.
PM: Going to our office in Hoi An by yourself, and join with group for bicycle tour. Spend half day leisurely cycling though the scenic countryside of Vietnam, far from the traffic the motor scooters, and the noises the city. You will cross the islands on the Song Thu river delta using local transportation, including ferries and floating bridges. Going back Hoi An around 5:30 PM Overnight in Hoi An.

Day 11: Hoi An - My Son Holy Land Tour (B, L)

AM: Our guide will come to meet you at your hotel at 8.00 am. Drive to My Son, a World Heritage, 40 km southwest of Hoi An. Located in a lush valley, My Son was a capital and religious center of Cham people, now remaining with red brick towers and sanctuaries. My Son, considered to be in the same league as some of Southeast Asia\'s greatest archaeological sites, including Angkor in Cambodia, Bagan in Myanmar, Ayutthaya in Thailand and Borobudur in Indonesia. These towers and sanctuaries was built from the 7 to 13 centuries. Have lunch on boat, Hoi An tour ends around 3 PM. Overnight in Hoi An.

Day 12: Hoi An - Saigon City Tour (B)

AM: Our driver pick you up at the hotel and transferring to Danang airport to take flight to Ho Chi Minh City - Vietnam\'s largest city has an exciting buzz as millions of people rush around on their daily business.
PM: Our tour guide will pick you up at the airport and transfer to hotel to refresh for a while and today you will visit all interesting sites and landmarks in Saigon City. First stop is Notre Dame Catholic Cathedral and short visit to French built Post Office nearby, and then we will proceed to see the Reunification Palace, formerly the Presidential Palace governed by the US-pro government of Republic of Vietnam. Touring the building and then we will visit the War Remnants Museum, which primarily contains exhibits relating to the American phase of the Vietnam War. Overnight in Saigon.

Day 13: Saigon - Cu Chi Tunnels Tour - Tay Ninh Caodaism (B, L)

Enjoy a morning drive through typical southern Vietnamese countryside to Cu Chi district, and Tay Ninh Province. Upon arrival in Cu Chi district, make a couple of stops for photo opportunities and a visit to a rice paper making factory at Tan Phu Trung Village. Experience ourselves the underground village of Cu Chi guerrilla fighters, which is simply a network of tunnels built during the long years of wars. AM: Leave Saigon for My Tho. My Tho is located on the northern banks of the Mekong river and is the closest town in the Delta area to Ho Chi Minh City, about 2 hours drive away. In the center of the town close to the river there is a large market that sells just about anything that can be eaten or is used in day to day business. Around the My Tho area you will find a maze of small canals that can be explored on one of the many organized boat tours. Enjoy a boat ride on the MekongRiver and visit an orchard on an island, with lunch en route. Continue with a visit to a snake farm and then continue driving to Can Tho. Check-in hotel and stay overnight in Can Tho.

Day 15: Can Tho - Cai Rang floating Market - Chau Doc (B, L, D)

After breakfast, boarding a motor boat for a long distance trip to discover the area\'s largest floating marketplace...on water! Then cruising through small channels to visit a rice noodle making village, a large rice mill.
After this, our bus takes you to Chau Doc. On the way, we will stop at Long Xuyen to visit Crocodile farm. And we will continue to Chau Doc. Overnight in Chau Doc.

Day 16: Chau Doc - Phu Quoc Island (B)

AM: Breakfast at your own. Our driver take you to Rach Gia Harbor to get on Express boat to PhuQuoc Island. Arrive in Phu Quoc, check in hotel. Take a rest. Have lunch at local restaurant.
The rest of this day is free time to visit some site by yourself in Phu Quoc Town as: Hung Long Pagoda, Thatch Spring, Ham Ninh fishing village (enjoy fresh seafood by yourself). Free time for sea bathing at hotel’s beach. Overnight in Phu Quoc island.

Day 17: Phu Quoc Island Tour (B, L)

AM: After breakfast at the hotel, drive to An Thoi village for visiting the best famous fish sauce factory. Then visit Phu Quoc vestige prison; War Memorial and a famous underground work grow Australian pearl. Have lunch at local restaurant.
PM: After lunch, being free for shopping snail shell & coral. Relax yourself at the beach. Overnight in Phu Quoc Island.

Day 18: Phu Quoc Island Relaxation (B)

Day 5: Saigon - Train to Nha Trang (B)

Free at your leisure in this morning. In the afternoon we board the SE2 Reunification Express at 14.40 PM, traveling through the lush green paddy fields up the coast, arriving in the resort of Nha Trang in the evening. Overnight in Nha Trang.

Day 6: Nha Trang Islands and Beach Tour (B, L)

AM: Pick up from the hotel transfer to the Cau Da harbor get on the boat to sail out. First diving sites are located around the bay of Nha Trang. We will visit fascinating Hon Chong Island (Husband islet) Rock and The Oceanographic institute featuring an aquarium full of colorful marine life including seashore and tropical reef fishes.

Day 8: Da Nang - Hoian Tour by Bicycle (B)

AM: Our guide & driver will pick you up at your hotel for Hanoi tour. Then visit Ho Chi Minh Mausoleum and Museum. Enjoy the architectural and historical aspects of Uncle Ho’s final resting-place. Just next door is Ho Chi Minh’s house on stilts. Lying to one side of the Mausoleum is the One Pillar Pagoda~ founded by King Ly Thai To in 1049 the structure has become an important symbol for the people of Hanoi. Continue to visit the Quan Thanh Temple (Taoist dating from the Ly Dynasty) and Buddhist Tran Quoc Pagoda on West lake. Lunch will be served at a local restaurant.
PM: After lunch to visit the Ethnology Museum continue to visit the Literature Temple and Quoc Tu Giam. Vietnam’s first university constructed in 1070 it’s gardens and well-preserved architecture offers a relaxing glimpse into Vietnam’s past.We will take you past Hoan Kiem Lake see the peaceful waters and visit Ngoc Son temple. Upon arriving in Ha Long City, take all stuff we move to our junk, check in private cabin with A/C, following fresh sea lunch while boat cruising through amazing landscape of cliff stone mountains emerge from green crystal water, spend the afternoon time for visiting biggest cave, swimming, relaxing at the beach other enjoy kayaking to explore lagoon, dinner and overnight in cruise.

Day 7: Halong Bay Tour with Kayaking (B, L, D)

After breakfast we start paddling to Van Chai Floating village and then continue paddling to Dark Cave. Tide permitting, we explore this amazing cave by kayak. Day 3 : Hanoi - Ha Long Bay Cruise (B, L, D)

08.00 – 8:15 AM: Our guide will meet you at your hotel and take to Halong Bay. On the way to Halong city enjoy the journey through the rich farmlands of the Red River Delta and the scenery of rice fields, water buffalo and everyday Vietnamese village life. Arrive in Halong board Halong bay Cruise . Lunch is served with a welcome drink while the boat is cruising the bay to enjoy the beautiful limestone seascape with Fighting cock, Dog Rock and Incense Burner . Then you take row-boat trip to go visit that land on the Yen stream “romantic time” about 1 hour to Thien Tru harbor. Then you will enjoy time to trekking go up and down visit the main cave so nice step by step you will arrive Huong Tich cave on the top of the mountain. To see Golden-Silver tree rice stuck….One hour down. Have lunch at bottom mountain in restaurant beside.

PM: After lunchtime, you will see the Heaven Kitchen pagoda and to know about Buddhism ancient architectural at Le Dynasty. Then you will come back by row-boat-trip and 2 hour road trip to Hanoi and arrive at about 18h00. Overnight in Hanoi.

Day 4: Hanoi - Halong Bay Cruise (B, L, D)

AM: After breakfast at hotel, our van will pick you up and we start our 4-hours drive to Halong Bay stopping on the way for some refreshments and local hospitality. Upon arrival at Halong City, we transfer to our boat for a cruise in the stunning Halong Bay. Sea food lunch will be served on board.
PM: After lunch we will have opportunity to visit one of the most beautiful caves of Halong, Surprise Cave. From here we take our boats to the Ti Top Beach, where we can have a swim or climb up to the top of the island for outstanding panoramic view of the Bay. Stay overnight on cruise.

Day 5: Halong Bay Tour - Hanoi - Sapa (B, L)

AM: The train arrives in Lao Cai around 6.00 AM, We drive up to Sapa about 50 minutes on Car / Van, you will be taken to a small guesthouse for a morning showers then your breakfast at a local restaurant here. After breakfast & short morning beak, we start trekking from Sapa town. Our trekking route is from here to through the villages of Hmong and Zay people, chances to meet the locals working on the mountainsides or the rice terraces, kids ride on back of buffalo, to take photograph ofpicturesque valleys & awesome scenery. We have picnic lunch on trekking route.
After lunch keep on trekking to Ta Van village of Zay people, where you will be warmly welcomed by the host, share the dinner with them, and stay at their traditional wooden house. Have dinner and home-stay in Tavan village at Dzay family.

Day 7: Sapa  Tour - Cat Cat village - Hanoi (B, L, D)

AM: Breakfast, visit village of the black H\'mong (Cat Cat village), walk around visiting people in the village and the hydroelectric power station built by the French in the old days.Back town have lunch
PM: Check out hotel, free to explore the town. At about 5 PM. drive to Lao Cai station for a night train back to Hanoi. Overnight in soft sleep train.

Day 8: Departure Hanoi (B)
